An easy recipe for delicious vegan and gluten free sweet potato noodles in a ramen miso broth. First of welcome to my blog. I am going to try and create simple, tasty vegan recipes here. I want wherever possible for my ingredients to be available in your local supermarket, proving that you don't need to shop at fancy health food shops to be.

Using a spiralizer (I use this Spiralizer), cut the sweet potato into noodles. Heat coconut oil in a skillet, and once the oil is hot, add mushrooms to the pan. Once mushrooms are cooked through, remove from pan and add sweet potato noodles and broccoli to the pan. Cover, and allow to cook for 5-7 minutes, until the broccoli florets are bright.
