To make the bread: Stir warm water and yeast together in a large bowl; let stand until yeast softens and begins to form a creamy foam, about 5 minutes. Mix in 2 cups flour, milk, sugar, melted butter, egg, and salt until combined. Gradually mix in remaining 2 cups flour and cinnamon until dough comes together.

Mix in the yeast and agave nectar. let sit for 10 minutes. In the bowl, whisk together the flour, anise, canela, pumpkin spice and salt. Set aside. In the bowl of the stand mixer, with paddle attachment, cream the butter and piloncillo (or brown sugar) until creamy. Mix in the eggs, pumpkin puree and vanilla extract.

30 minutes before the conchas are done proofing, preheat the oven to 350 degrees F then bake for 20-22 minutes at 350 degrees, until the buns are nice and browned.
