I made up a large batch of sourdough loaves this weekend, but decided to have one of them as a full-flavoured savoury loaf! And having the ingredients in the kitchen, I couldn't not make a version of pesto sourdough!Rather than spread home-made pesto over the dough before rolling it up, which I often do with pesto breads, I wanted the more defined ingredents of a typical pesto to come through.

Cover and let rise for several hours. Preheat the oven to 450 degrees. Bake the bread for 25 minutes, or until golden brown on top. Remove from the oven and allow to cool for.

Sift together flour, salt and sugar. Add flour to starter water; knead by hand, or with a dough mixer, until a cohesive dough forms. Add more flour or water, as needed (it's always needed!). Transfer to a glass bowl, sprinkled with flour, knead the dough a few times to get a tight smooth ball.
