To me empress tastes like alcoholic tea. Not necessarily a bad thing, but if you're looking for a gin profile, empress wouldn't be the gin I'd recommend. But if you like a good cocktail, I'd recommend Empress, it goes great with elderflower liqueur, tonic, and fresh lime juice.
