The Friendly's Wattamelon Roll was first introduced in the early 1970s and quickly became a hit among ice cream aficionados. The innovative design of the dessert, which mimicked the appearance of a watermelon slice, made it a visually appealing and fun addition to any summer gathering.

Basically, it just isn't summer without a classic Wattamelon Roll and its "refreshing watermelon and lemon sherbet with rich chocolate chip seeds.". We still can't get over the loss of this ice cream (technically sherbet) roll. And with the end of National Ice Cream Month (July), we can't help but feel it is only right to mourn this.

The hardest part of making this dessert is timing the melting of the sorbet. I lined a circular pan with wax paper and began with scooping out the lime sorbet and putting it around the entire edge of the pan. Having the raspberry sorbet thawing and a mushy consistency I then placed it in a bowl and slowly poured in the mini chocolate chips.

Freeze for 10 minutes or until firm, then shape and smooth as you did with the lime layer. Mix pink sherbert with chocolate chips until evenly incorporated. Spoon into center of dessert, and spread evenly. Freeze for 10 minutes or until set. Cover with saran wrap and keep frozen until ready to serve.
