Eggplant Agrodolce

This version uses grilled eggplant as the base for the mixture of red wine vinegar, olive oil, honey, garlic, and sweet golden raisins. I added in some fresh-from-the-garden cherry tomatoes for added color, all of which benefits from the vibrant 'pop' of flavor from the fresh mint garnish.


Eggplant Agrodolce
