StarSan is good as long as the PH is 3 or lower. I believe it's generally advertised as mixed batch being good for 3-4 weeks, but people have reported having the PH stay below 3 for several months. To help it stay good longer, keep it in a sealed container, and use distilled water. Buy some PH test strips to be able to test if your starsan is.

According to its Safety Data Sheet Starsan appears to be made of an aqueous solution of two chemicals, phosphoric acid and dodecylbenzenesulfonic acid (!). Phos acid is stable and I can only guess that it's the phos acid that is the active sanitising agent by creating an acidic environment that kills bugs, so even after a long time in store that part should be OK.

I have a qt. bottle of star san that I opened in sept. of 2008 and I used a very small amount of it that year. Then in the spring of 2009 was when I went through my lung cancer surgery then chemo and I quit brewing for a long time.

I have, more or less, simply assumed it wouldn't go bad over time because it is acid-based, and I wouldn't assume the acid to degrade over time, but I am not chemist. Either way, it still behaves exactly the same. Mixes out the sames, the diluted star-san looks and smells similar and foams in the same manner and magnitude.

Because of the 1 or 2 year freshness recommendation via Five Star, my recommendation to most homebrewers is to purchase the smaller 8 oz bottle of Star San. If you're using the spray bottle method [See: Star San Tips, Tricks and Guidelines] 8 ounces of Star San should last many homebrewers for at least a year.
