Instructions. In a medium pot over medium-high heat, combine all of the ingredients and bring to a full rolling boil, stirring frequently to prevent scorching. Once the cranberries have burst and the sauce has thickened into a jam-like consistency, about 15 minutes, remove the pot from heat.

Turn the heat to a simmer and cook the cranberries until they burst and soften, about 15 minutes. Meanwhile, in a small bowl, combine ½ cup of the brown sugar and pectin powder and mix thoroughly. Add the calcium water, cinnamon, cloves, and allspice to the cranberries and stir well to combine.

Wash, sort, and coarsely chop the berries. When the water in the canner comes to a full rolling boil, boil jelly jars for 20 minutes to sterilize them. Measure the pectin into a small bowl and add 1/4 cup of the sugar to the pectin. Combine and set aside. Measure the rest of the sugar into a bowl and set aside.
