Cornflake Scotcheroos In the early days of this blog, I posted scotcheroos--an absolutely addictive dessert bar! Wanting a quick dessert when my family was in town a few weeks ago, I decided to make these once again. However, after two trips to the grocery store the day before, I was in no mood to return when I discovered I didn't have rice.

How to make Soft and Chewy Scotcharoos. Line a 9X13″ pan with parchment paper and a spritz of non stick spray. Measure out all of your ingredients before you start because it comes together fast. Start by adding the sugar, vanilla, honey, and light corn syrup into a large pot over medium heat and stir often.

First and foremost, Scotcheroos are traditionally made with crisped rice cereal, while others are made with corn flakes. The latter have been known as Special K Bars, since the cereal Special K would take place of the crisped rice. Regardless of what cereal is used, the result (in my opinion!) is the same: crunchy, peanut buttery, butterscotchy.

Ingredient Notes. Corn flakes cereal - You can also substitute rice krispies cereal for a more traditional Scotcheroo! Corn syrup - Be sure to use light corn syrup (like Karo). Peanut butter - Creamy, shelf stable peanut butter gives these the best consistency. Food coloring - Green gel coloring makes the treats festive.Feel free to swap out the color or leave the food coloring gel out.

Once it starts boiling, remove from heat. Add in the peanut butter and vanilla. Stir until combined. Pour over Rice Krispies and stir to coat evenly. Press into a greased 9×13 pan. Melt the chocolate chips and butterscotch chips in the microwave, stirring every 30 seconds until completely smooth.

In a medium saucepan, over medium-low heat and stirring constantly, melt chocolate chips (1 cup) and butterscotch chips (1 cup) together until smooth. Spread over the top of the bars and let the bars cool. Cut into squares. Let the mixture come to room temperature and set.

Mix - Pour the cereal in a large mixing bowl. Add peanut butter mixture; stir until thoroughly coated. Press onto bottom of the pan. Frosting - Microwave the butterscotch and chocolate chips in a microwave-safe bowl for 1 minute; stir. If necessary, microwave at 10 to 15-second intervals, stirring until smooth.

Press the mixture evenly into a lightly buttered 9×13 pan. In a small microwaveable bowl, microwave chocolate and butterscotch chips for 1 minute. Stir, then microwave in 30 second bursts, stirring in between, until just barely melted. Spread the chocolate mixture over the bars and let cool and set completely before cutting and serving.

Generously butter a 9x13-inch baking pan; set aside. Mix together peanut butter, corn syrup, and sugar in a large pot. Cook over medium heat, stirring until peanut butter melts. Bring mixture to a boil. Remove from the heat. Stir in rice cereal until well combined. Transfer mixture into the prepared pan. and pat it down with buttered hands.

In a large bowl, add Rice Krispies cereal and pour corn syrup mixture into the cereal as you mix. Pour cereal mixture into the 13"x9" pan and spread evenly. Melt milk chocolate chips and butterscotch chips in a small dish in the microwave. Stir every 30 seconds until melted through. Pour over top of the cereal and spread evenly.

Stir in peanut butter. In a large bowl, add the Rice Krispie cereal and peanut butter mixture and mix until well blended. Press cereal mixture into a parchment paper lined or buttered 9X13 inch pan. Melt together the chocolate chips and butterscotch chips in a microwave safe bowl or in a saucepan on the stove.

Lightly grease a 9X13-inch pan with butter or cooking spray or line with foil/parchment and grease the foil/parchment. Set aside. In a large saucepan or pot, add the butter, corn syrup, granulated sugar and brown sugar. Cook on low heat until the butter is melted. Bring to a simmer and immediately remove from the heat.

Instructions. Grease a 9x13 pan with butter and set aside. In the bottom of a large pot, heat sugar and Karo syrup over medium heat. Stir occasionally. Cook just until sugar dissolves or until it starts to barely bubble. Remove from heat, stir in the peanut butter until it melts and the mixture is smooth.

1 cup semi-sweet chocolate chips. 1 cup butterscotch chips. Directions. Grease a 9 x 13" pan with cooking spray and set aside. Over medium heat, cook the corn syrup and sugar in a large saucepan. Bring the mixture to a boil and remove from the heat. Stir in the peanut butter.
