This super simple Christmas Rocky Road is packed full of delicious Christmas flavours: ginger biscuits, cranberries, pistachios, orange zest - and of course marshmallows. (It wouldn't be rocky road without marshmallows!) I've used dark chocolate instead of milk chocolate as it really complements the Christmas flavours.

Cover and place in the fridge to set for 3-4 hours or overnight. Remove the rocky road from the tin, melt the remaining 100g chocolate and pour over the top. Return to the fridge to set.
