Dry ingredients - Mix the buckwheat flour, plain flour, salt and remaining sugar in a bowl. Wet ingredients & foamy yeast - Add the milk, butter, egg and the foamy yeast then mix until combined. Rise 1.5 hours - Cover the bowl in cling wrap then place it in a larger bowl filled with 3 cm / 1.2″ of warm water.

Heat a 12" nonstick skillet over medium heat; brush lightly with oil. Working in batches spoon 1 tbsp. amounts batter into pan to form 1 1⁄2"-2" rounds. Cook, flipping once, until golden.

Remove and set on a plate covered with a kitchen towel to keep warm. Repeat with the remaining batter. In a small bowl, combine the crème fraîche with half of the chopped dill. Spread a small amount of the crème fraîche mixture onto each blini. Place a slice of smoked salmon on top.

In a small bowl, mix the salt, sugar. Grind the coriander, fennel and white peppercorns in a mortar and pestle, then add to the salt and mix to combine. Stir in the zest and gin, then set aside. How to Make Blinis Mangeons

Spoon small circles of batter onto medium-hot griddle. Cook until bubbles form around the edges of the pancake. Flip and cook other side. Top each mini pancake with ½ ounce of smoked Gravlax salmon, ½ tsp. crème fraiche and a small sprig tip of dill.
